Chilled Mediterranean Quinoa Salad with Herb Rubbed Chicken Recipe

Ingredients Quantities Instructions
dijon mustard 1 tsp Combine mustard, lemon juice, spices and olive oil in bowl and whisk well. Add remaining ingredients to dressing and fold in until just combined. Place in refrigerator and allow flavors to marry for 30 minutes before serving.

Sea Salt, Mediterranean Spiced 1 tsp
Mint Leaves 1/2 tsp
olive oil 1/2 cup
red onion, diced ½ “ 1/4 cup
feta cheese, crumbled 1/2 cup
grape tomato, quartered 1/3 cup
kalamata olives, cut in ¼’s 1/4 cup
cucumbers, diced ½” 1/3 cup
Fresh chopped parsley 1 tbsp
red quinoa, cooked 2 cups
4 oz. chicken breasts, boneless, skinless 4 each Pre heat oven to 350 degrees. Combine chicken breast, seasoning and olive oil. Place chicken on baking sheet and bake for about 15-20 minutes or until and internal temperature reads 165 degrees. Allow to rest for 10 minutes before slicing. Serve over Mediterranean Quinoa Salad
