From Richmond, Virginia comes a new Arctic Char of cured perfection from Metzler Chef Owner Brittney Anderson. Made with a savory spread of brown sugar, Kosher salt, chopped dill, grated orange, grated red beet, sumac plus McCormick’s own White Pepper and Pink Peppercorns, this excellent entree is then wrapped and stored for 3 days, ensuring firm flesh and flavor by the slice. 

  1. Mix all ingredients together and spread on the flesh side of the Arctic Char.
  2. Wrap tightly in plastic wrap and keep in the refrigerator fo 1-3 days, flipping over each day.
  3. When the flesh feels firm and the fillet is stiff, was the cure off and slice thinly to serve.
