Recipe Details

With OLD BAY layered throughout this recipe, bringing a key Mid-Atlantic flavor to a Southern classic has never been so easy. Tiger sauce is made more addictive with the cayenne pepper of OLD BAY playing off the horseradish for an extra kick in the creamy, spicy condiment. OLD BAY is also added to the breading and sprinkled on the freshly fried oysters, making sure the seasoning is layered in to every bite. You can pile the oysters high, but customers still won't be able to get enough!

For the Po'Boy:

  1. Set deep fryer at 350 degrees F
  2. Coat the oysters evenly with Zatarain's Seasoned Fish-Fri mixed with OLD BAY Seasoning and place in the deep fryer until they have a golden color. Remove and drain excess oil
  3. Toast the baguettes

For Tiger Sauce:

  1. Combine all ingredients until evenly distributed

For Serving:

  1. Spread OLD BAY Tiger Sauce on both sides of toasted baguette. Add lettuce and tomatoes. Place fried oysters on top and close baguette. Optional: Add Zatarain's Creole Mustard to one side of the baguette for extra flavor.

CHEF’s TIP!

Make OLD BAY Seasoning your own signature spice by increasing the heat with extra black pepper or cayenne pepper, or a smoky note by adding crushed chipotle or smoked paprika
