 Move over, avocado toast. The avocado slaw shall slay in this summertime recipe from Chef Rich Francis! Reel in new customers with fresh shrimp marinated in a delicious combinations of coriander seed, garlic powder, oil and lime juice. Pomegranate and herb dressing and avocado slaw made with green mango is the perfect complement to your summer menu.

For the Shrimp:

  1. In a bowl, combine all ingredients and mix well. Add shrimp and marinate for 30 minutes and reserve.
  2. On high heat, quickly grill marinated shrimp.
  3. Season with lime juice and more salt, and set aside.

For the Dressing & Slaw:

  1. Whisk all ingredients for Pomegranate & Herb Dressing until well incorporated. Adjust seasoning as needed, to taste.
  2. Add prepared avocado and green mango. Toss to combine.
  3. Refrigerate until ready to use.

To Serve:

  1. Place green mango & avocado slaw on serving plate, and top with 4 shrimp. Garnish with fresh cilantro, crispy shallots and lime wedge.

CHEF’s TIP!

Use pomegranate syrup to dress salads, as a drizzle on a poke bowl, or as a marinade component for pork.
