- In a large wide pot, sauté chicken in vegetable oil until internal temperature of 165ºF is reached.
- In a #2 hotel pan, combine cooked chicken breast with rice mix, onions, almonds, peppers, carrots, green beans, tomatoes, and water.
- Mix well to combine.
- Cover pan with foil and bake in a 400ºF oven for 55 minutes or until all water has been absorbed.
- Let rice rest 5 minutes and fluff with a fork.
- To serve, plate rice mixture in bowl.
