  1. In a large wide pot, sauté chicken in vegetable oil until internal temperature of 165ºF is reached.
  2. In a #2 hotel pan, combine cooked chicken breast with rice mix, onions, almonds, peppers, carrots, green beans, tomatoes, and water.
  3. Mix well to combine.
  4. Cover pan with foil and bake in a 400ºF oven for 55 minutes or until all water has been absorbed.
  5. Let rice rest 5 minutes and fluff with a fork.
  6. To serve, plate rice mixture in bowl.
