Set up a half sheet tray or hotel pan with several lint free towels and have a cutting board and sizzle platter or small pot ready.
Heat oil over medium to medium high heat in a large saute pan. Once oil is hot shallow fry plantain chunks until they are just starting to turn golden on each side, about 2 minutes per side. Transfer to towel line tray to drain off some oil. Place on cutting and smash with the sizzle platter or pot until the plantain is roughly 1/2" thick.
Return smashed plantains to hot oil and fry until golden brown and crisp on both sides, roughly 2 more minutes per side. Transfer to towel lined tray to drain off some oil.
Place tostones in a large bowl. Sprinkle with seasoning and toss until evenly distributed. Serve warm.
