Main Recipe | Serves 4
2 cups chicken, cooked, pulled
1/2 cup Sticky Sweet Legendary BarBQ Sauce
1 each lime, freshly juiced, reserved
1/2 tsp white distilled vinegar
2 cups quinoa, cooked
1 can black beans, 15 ounces, drained, rinsed
1 3/4 cups corn, grilled, cut
1/4 tsp McCormick Culinary ® Black Pepper, Table Grind
1 each avocado, cut into 1/2" cubes
1/2 cup cilantro , fresh, picked, leaves only

Procedure

For the Chicken:

In a bowl, combine barbecue sauce, lime juice, vinegar, and pulled chicken. Mix well to combine. Set aside.

For Assembly, Garnish & Serving:

In a large mason jar, layer quinoa, black beans, cilantro, corn, pulled chicken, avocado, and cilantro. Serve with lime wedges.
