Cattlemen's® Kentucky Sweet & Bold® BBQ Sauce blended with butter, sautéed vegetables, chicken broth and Bourbon then tossed with cooked chicken wings.
- Caramelize the onion and garlic in oil. Season with salt and white pepper. Remove from heat and cool to room temperature. Blend with room temperature butter.
- Blend Cattlemen's and broth. Hold hot for service.
- In a large sauté pan, heat 2 tbsp. of above listed butter mixture. Add 15 hot fried chicken wings, heat and add 1/4 cup bourbon. Ignite pan to flame wings in bourbon. Allow 1/2 cup of the Cattlemen's broth mixture and toss wings to coat completely.
This procedure can be done from a display kitchen, in a catering setting, from a dining room or bar flambé' cart.
Use these same ingredients for an elegant flambé' breast of chicken, pork tenderloin medallions or seafood.
This recipe is based on an average chicken wing weight of 1 1/2 oz.
