Sliced chicken thighs tossed with a classic barbecue sauce that is laced with gold tequila and Cholula® Chili Garlic Hot Sauce. Ingredients Servings 4 8 24 48 80 100 Spicy Tequila BBQ Sauce | Serves 4 1/4 cup Gold Tequila 1/2 cup Cattlemens ® Original Base BBQ Sauce 1/4 cup Cholula® Chili Garlic Hot Sauce Chili Garlic Red Cabbage Slaw | Serves 4 2 tbsps Mayonnaise 2 tbsps Sour Cream 1 tbsp Cholula® Chili Garlic Hot Sauce 1 1/2 cups Red Cabbage, shredded 1/2 cup Jicama, julienne 1 tbsp Cilantro, chopped Sliders | Serves 4 12 each Slider Buns 1 1/2 pounds Chicken Thighs, cooked, pulled 3/4 cup Spicy Tequila BBQ Sauce 3 each Cheddar Cheese, mild, slices, quartered 1 1/2 cups Chili Garlic Red Cabbage Slaw 24 each Dill Pickle, 1/8" slices Procedure Spicy Tequila BBQ Sauce In a heavy bottom sauce pan over medium-high heat, add tequila and reduce by half.
Add BBQ sauce and Cholula, stir well, and bring to a simmer for just a few minutes. Hold warm for service.
Chili Garlic Red Cabbage Slaw
In a bowl, combine mayonnaise, sour cream, and Cholula. Whisk well. Add cabbage, jicama, and cilantro, toss to combine. Hold refrigerated for service.
Service Set grill to medium-high. For each serving, heat a saucepan over medium-high heat. Add cup chicken and 3 tablespoons sauce. Stir to combine and heat until warmed through. Toast 3 buns on the grill.
Plate bottom of buns and cover each with a quarter slice of cheese. Top each with 1/3 cup sauced chicken, 2 tablespoons of slaw, and 2 pickles. Secure top bun with a pick. Serve hot. CHEF’s TIP!
