Rub the steaks with the olive oil. Season the steaks on both sides with the salt. Push the steaks into the pepper on both sides to create a crust.
Add butter to a saute pan and heat the pan over medium high heat it until it is smoking. Add the steak and sear on each side for three minutes for medium rare. Flambe’ the steaks with the brandy add the beef stock and let reduce by half. Stir in crème fraiche.
Remove the steaks from the sauce and slice them. Plate the sliced steak and pour the sauce over.
