Featuring Stub's Sticky Sweet Legendary Bar-B-Q Sauce.

  1. Preheat oven to 325ºF.
  2. In a bowl, toss carrots in olive oil and black pepper. Heat a cast iron pan and sear cut sides of carrots until lightly charred, about 2 minutes.
  3. Remove carrots to a foil lined pan and brush with barbecue sauce. Place in oven to glaze. Cook until carrots are tender. Remove and let cool slightly.
  4. Place carrots on a serving dish and top with lime zest, lime juice, cotija cheese, and cilantro leaves. Drizzle with any excess barbecue sauce.
