In a bowl, combine mayonnaise and Cholula Smoky Chipotle Carnitas Seasoning Mix. Whisk well to combine. Hold refrigerated for service.
Heat panini grill to medium high. For each serving, spread 2 slices of bread with 1/4 teaspoon butter each. Place one slice of butter side down on the panini grill.
Cover bread with 1 1/2 slices of cheese, 1/3 cup Cholula Smoky Chipotle Carnitas Seasoning Mix, 2 tablespoons aioli, 1 slice bacon broken in half, 1/4 cup onions, 1 tomato slice, and 1 1/2 slices of cheese. Top with a second slice of bread, buttered side up.
Close panini grill and cook until cheese is melted, bread is toasted and sandwich is hot throughout.
Remove from grill, secure with 2 bamboo picks, and cut on a diagonal. Serve hot.
