A Mid-Atlantic inspired side dish flavored with OLD BAY® Seasoning. Ingredients Servings 4 8 24 48 80 100 Serves 4 1 pounds Yukon Gold Potatoes, 1" pieces 1/2 cup Mayonnaise 2 tbsps Celery, 1/4" dice 1 tbsp Red Onion, 1/4" dice 2 tsps OLD BAY® Seasoning 1 1/2 tsps Zatarain's® Creole Mustard 2 tbsps Flat-Leaf Parsley, chopped Procedure Prep In a sauce pot on high heat, boil potatoes in salted water until fork tender. Drain and cool.
In a bowl whisk together mayonnaise, celery, onion, OLD BAY Seasoning, and Zatarain's Creole Mustard until blended. Gently fold in potatoes. Hold refrigerated for service.
Service For each serving, portion 4 ounces prepared potato salad into desired dish. Garnish with parsley and additional OLD BAY Seasoning. Serve chilled. CHEF’s TIP!
