Hollandaise with the subtle addition of smoky BBQ heat. 

  1. Place egg yolks and lemon juice in a bowl over a pot of simmering water. Whisk until doubled in volume.
  2. Remove from heat. Slowly add butter while whisking until fully incorporated.
  3. Whisk in BBQ sauce. Hold warm for service.

CHEF’s TIP!

To make hollandaise in a blender, blend egg yolks and lemon juice while slowly drizzling in hot butter (160°F). 

To use individual orders of chipotle BBQ sauce, top the item to be sauced with your house hollandaise and drizzle BBQ Sauce.
