A creamy Mexican cheese sauce laced with smoky chipotle barbecue.
- In a heavy bottom pot, melt butter and add flour. Mix well and cook until mixture begins to bubble to make roux.
- Slowly add milk, whisking to avoid lumps. Bring to a boil, reduce heat and simmer until thickened. Add cheeses and seasonings. Whisk to melt cheese.
- Remove from heat and add BBQ sauce. Whisk until fully combined. Hold hot for service or refrigerate and reheat for service.
Use this sauce on Mexican inspired breakfasts, and to smother burritos and chimichangas.
