Scratch recipe for traditional creamy Caesar Dressing.

  1. In a blender or food processor, puree anchovies, garlic, egg yolks, lemon, mustard, and black pepper.
  2. With blender running slowly add oil in a thin stream until dressing thickens.
  3. Transfer to bowl and fold in Parmesan cheese. Hold refrigerated until service.

CHEF’s TIP!

Create a spicy version of this dressing by adding Frank's RedHot® Buffalo Wings Sauce in a 2:1 ratio of Caesar to Buffalo Sauce.

For a thicker sauce that could be used on pizzas use a 1:1 ratio.
