In a food processor combine red peppers, olive oil, garlic, and Italian seasoning. Blend until well mixed.
Add Dijon Mustard and mayonnaise, stir until combined. Hold refrigerated for service.
Set grill to medium high. For each serving, grill burger patty to 165°F, just before finishing add a slice of mozzarella to melt. Toast bun.
Spread base of bun with 1 tablespoon of Red Pepper Aioli. Place patty on base and top with 2 sliced tomatoes and 1/4 cup arugula. Spread an additional tablespoon aioli on crown of bun and top burger. Serve hot.
