Servings    4   8   24   48   80   100    Ginger Pineapple Salsa | Serves 4  1 cup pineapple, fresh, chunks  (drained, canned chunks may be substituted)      1/4 cup roasted red bell pepper, 1/2" dice      2 tbsps Lime Juice, fresh      2 tbsps  Thai Kitchen ® Sweet Red Chili Sauce       2 1/2 tsps  McCormick Culinary ® Ginger, Ground      Grilled Tilapia | Serves 4  1 tbsp  McCormick Culinary ® Sesame Seeds, White       1/2 tsp  McCormick Culinary ® Sea Salt, Mediterranean Fine Grind       1/4 tsp  McCormick Culinary ® Black Pepper, Table Grind       1 1/2 pounds tilapia filets     2 tbsps olive oil     1/2 tsp  McCormick Culinary ® Cilantro, Freeze Dried      Garnish | Serves 4  4 Cilantro, fresh, picked      Procedure  Ginger Pineapple Salsa Combine pineapple with red pepper, lime juice, chili sauce, and ginger.  Warm mixture in saucepan to 165ºF.  Tilapia Toast sesame seeds. Mix sesame seed, sea salt and pepper. Brush fish with oil. Sprinkle with seasoning mixture.  Grill over medium-low heat 4 minutes per side or until fish flakes easily with a fork.  Plating  Garnish with fresh, chopped cilatnro. Serve with the roasted ginger pineapple sauce. Chef's Tip!
