In the pitcher of a blender add chipotle chile pepper and boiling water. Cover with lid and allow to hydrate for 15 minutes.
Add tomatoes, vinegar, lime juice, garlic, brown sugar, salt, oregano, cumin, cinnamon, black pepper, and allspice. Blend until smooth.
In a sauce pan heat oil over medium high heat. Pour in blended chile mixture and bring to a boil. Reduce heat to low and simmer sauce for until thickened, about 20 minutes. Remove from heat and cool. Refrigerate until needed.
