With a serving of salt and pepper-sauteed kale, quinoa and tempeh made with garlic, coconut oil, plus McCormick Culinary turmeric and chili flakes, no one will be able to resist these plum, spicy summer rolls, created by Chef Brian Skinner in Vancouver, British Columbia.

Servings 4 8 24 48 80 100 Turmeric Tempeh | Serves 4 8 oz Tempeh, cut 1/2" cubes(Green Cuisine brand or similar) 2 tbsps Coconut Oil 1 each White Onion, medium, thinly sliced 1 clove Garlic, fresh, finely chopped 1/2 tsp McCormick Culinary ® Turmeric, Ground 1/4 tsp McCormick Culinary ® Red Pepper, Crushed 1/2 cup Thai Kitchen Coconut Milk 1/4 tsp Himalayan Salt Sauteed Kale | Serves 4 1 bunch Kale 1 tsp Coconut Oil 2 tbsps Water 1/2 tsp Gourmet Salt 1/2 tsp McCormick Culinary ® Black Pepper, Pure Ground Summer Rolls | Serves 4 4 each Rice Paper Wrappers 8 tbsps Quinoa, cooked to specifications on package 12 pieces Kale, sauteed 12 pieces Turmeric Tempeh Procedure For the Tempeh: In a large saute pan, preheat the coconut oil (1 teaspoon) over high heat until it begins to ripple. Add cubed tempeh and sliced onion and stir. Saute for 5 minutes, stirring regularly to a deep golden brown color. Turn down heat, add turmeric, chili flakes and chopped garlic and toast for 1 minute. Add coconut milk, Himalayan salt and water (1/2 cup). Simmer for 5-10 minutes until sauce has thickened. Set aside to cool. For the Sauteed Kale: Clean the kale, remove the ribs and cut into bite sized pieces. Preheat a large pot on medium-high heat. Add the kale and water (2 Tablespoons), followed by the coconut oil (1 teaspoon) last.
(Note: be sure not to add the oil and water first). Cover the pot with a lid for 2 minutes. Remove the lid, stir the kale and cover for another 2 minutes. Remove from the heat and season the kale with salt and pepper. For the Summer Rolls: In a large bowl of hot (not boiling) water, soak the rice paper for approximately 10 seconds, or until it is completely soft. Lay softened rice paper on a firm surface. Scoop quinoa (2 Tablespoons per roll) in the center of the rice paper. Next place the sauteed kale and turmeric tempeh on top of the quinoa. Fold the bottom of the rice paper to cover the filling. Next fold the two sides in to the edges of the filling. Finally, roll the rice paper tightly up to close the summer roll.
