The classic Po' Boy gets a Chesapeake twist with Tiger Sauce and OLD BAY® layered through every bite. Ingredients Servings 4 8 24 48 80 100 Tiger Sauce | Serves 4 1/3 cup Sour Cream 1/3 cup Mayonnaise 1/3 cup Zatarain's Horseradish, drained 2 tsps OLD BAY® Seasoning Oyster Po' Boy | Serves 4 1 cup Zatarain's® Seasoned Fish-Fri 2 tbsps OLD BAY® Seasoning 1 pound Oysters, cleaned 4 each Baguette, 6", split 1 cup Tiger Sauce 2 cups Lettuce, shredded 12 slices Tomato Procedure Tiger Sauce In a bowl, combine sour cream, mayonnaise, horseradish, and OLD BAY Seasoning. Whisk until well mixed. Hold refrigerated for service Prep In a bowl, combine fish fry with OLD BAY Seasoning. Set aside for service. Service Set a deep fryer to 350°F. For each serving, toss 4 ounces of oysters in seasoned fish fry until well coated. Remove and shake off excess. Fry until golden brown. Remove and drain excess oil.
Toast baguette. Spread 2 tablespoons of tiger sauce on each side of baguette. Place a 1/4 cup lettuce and 3 tomato slices on base of bun. Top with fried oysters. Serve warm. CHEF’s TIP!
