A platter of crispy French fries covered with shredded smoked beef that’s doused in Cattlemen’s® Memphis Sweet BBQ™ Sauce, melted fresh cheese curds and a fried egg. Ingredients Servings 4 8 24 48 80 100 Serves 4 10 oz Smoked Beef Brisket, shredded 1 1/3 cups Cattlemens ® Memphis Sweet BBQ Sauce 2 pounds French Fries 1 cup Cheese Curds 4 each Egg, fried sunny side up 1 tbsp Scallions, slivered Procedure Prep In a sauce pot combine the beef with Memphis Sweet BBQ. Cook, stirring, until heated through. Hold hot for service or cool completely and reheat for service.
Service Set deep fryer 375°F. For each serving, fry 8 ounces french fries to crisp, golden brown. Drain and place in desired serving dish.
Place top hot fries with 1/2 cup of cheese curds and cover with 1/2 cup sauced brisket.
Finish with fried egg and 1 teaspoon scallions. Serve hot.
