In a bowl, combine softened cream cheese, Cholula®Green Pepper Hot Sauce, colby jack cheese, cojita, scallions, and roasted garlic seasoning. Beat together until ingredients are well mixed. Fold in chicken until evenly distributed.
Place 1 cup of chicken mixture on 1 tortilla. Evenly spread chicken mixture across surface of torilla and tightly roll up from the bottom folding in the sides. Wrap in plastic wrap and repeat with remaining mixture and tortillas. Hold refrigerated for service.
For each serving, slice one wrap in six pieces on a 1" bias to create pinwheels. Arrange on plate and serve chilled.
