10 oz Bacon, Cooked, Diced
1/4 cup Chives, Minced, For Garnish

Prep
Prepare roux for the cheese sauce. In large pot or Dutch oven, melt butter over medium-high heat and whisk in the butter constantly until paste forms, 3 to 5 minutes. Slowly add in milk and whisk until roux thickens milk to a thick nappe (consistency), about 4 to 6 minutes. Ensure milk does not come to a full boil. Remove from heat once desired thickness is reached. Add seasoning and cheese; mix well until thoroughly combined. Hold warm for service.
For the Firecracker Ranch mix ingredients in small bowl. Hold cold for service.
Mix 2 tablespoons Firecracker Seasoning with ground beef and onion. Brown seasoned ground beef and onion in a large pan. Hold warm for service.
Fry frozen fries per package instructions. Once cooked and drained of excess oil, toss in remaining 2 tablespoons Firecracker Seasoning. Hold warm for service.
Service
Combine fries, beef and bacon together. Top with Firecracker cheese sauce, Firecracker ranch and garnish with chives. Serve immediately.
