- 2 pounds Golden Beets, washed & scrubbed of all dirt
- 1 cup Unseasoned Rice Vinegar
- 1 cup White Wine Vinegar
- 1 cup Water
- 3 tbsps Pickling Spice Extra Fancy
- 1/2 tsp McCormick Culinary ® Pure Vanilla Extract, Premium
- 1 tbsp Kosher Salt
- 1/4 cup Raw Sugar

Procedure
- Slice beets, 1/16" thick on a mandolin. Place bets in an appropriate and sanitized storage container.
- In a sauce pot bring remaining ingredients to a boil. Reduce heat and simmer for 5-10 minutes.
- Pour hot pickling liquid over beets.
