2 tbsps Chives, Chopped
Procedure
Prep
In a small bowl, whisk together sour cream, ranch dressing, and lemon juice. Season with salt and pepper to taste. Thin with a splash of water if needed for drizzle consistency. Hold cold for service.
Bake or fry tater tots according to package directions until crispy. Hold warm for service.
Service
In an oven-safe skillet or small baking dish, pile the crispy potato puffs. Top evenly with cheddar cheese, scrambled eggs, and crumbled bacon. Sprinkle with everything bagel seasoning. Return skillet to oven or place under a broiler just until cheese melts, about 2 to 3 minutes. Drizzle with the sour cream ranch and sprinkle with chives. Serve immediately.
