- For the Five Spice Comeback Sauce, mix all ingredients in small bowl until well blended. Cover and refrigerate until ready to serve.
- For the Burgers, mix all ingredients in medium bowl. Divide evenly and shape into 6 burger patties.
- Grill burgers over medium heat 4 to 6 minutes per side or until burgers are cooked through (internal temperature of 160°F).
- For the Fried Lotus, toss lotus root with corn starch to coat well. Heat oil in large deep saucepan on medium-high heat to 350°F. (Make sure not to fill saucepan more than 2/3 of the way to the top with oil).
- Fry lotus root 2 to 3 minutes or until crispy, working in batches as needed. Remove from oil with slotted spoon or tongs and place on paper towel-lined plate to drain. Transfer hot fried lotus to large bowl. Sprinkle with seasoning, tossing to coat evenly.
Service
- To assemble, spread comeback sauce on cut sides of rolls. Place arugula on bottom half of roll. Place burger on top and layer with fried egg and a couple crispy lotus pieces. Serve burgers with remaining fried lotus on the side with remaining comeback sauce for dipping.
