Eggs Benedict becomes exciting with the spicy addition of French's Dijon and roasted green chili salsa blended with hollandaise.

Green Chili Hollandaise | Serves 4
3/4 cup Hollandaise Sauce
1/4 cup Fire Roasted Green Chiles, diced, canned, drained
1 tbsp Frenchs ® Dijon Mustard
Eggs Benedict | Serves 4
2 tbsps Frenchs ® Dijon Mustard
4 each English Muffins
8 slices Canadian Bacon
8 each Eggs
1 cup Green Chili Hollandaise

Procedure

Green Chili Hollandaise

In a bowl whisk green chiles and mustard into hollandaise. Hold warm until service.

Service

For each serving, toast one English muffin.
Top each muffin half with 1 slice Canadian Bacon, 1 poached egg and 1 ounces of the Chili Mustard Hollandaise. Serve warm.

This delicious Green Chile Hollandaise is also great on grilled beef medallions.
