Mexican Street Corn (Elotes)

A popular Mexican specialty, grilled corn is coated in mayo seasoned with McCormick® Culinary Taco Seasoning Mix and lime juice then topped with crumbled Cotija cheese.

Prep

1. In a bowl, mix mayonnaise with taco seasoning and lime juice. Whisk well to combine. Hold for service.

Service

1. Set grill to medium-high. Brush each ear of corn with olive oil, as needed, and grill for 3 to 4 minutes on all sides, until corn is cooked and well charred on all sides.
2. Brush each ear with about 1 1/2 tablespoons seasoned mayonnaise and sprinkle with 1 1/2 tablespoons crumbled cheese. Serve immediately.
