A bright and tropical salsa gets its heat from Peruvian Ají Amarillo. 

This recipe was developed for the Flavor Forecast: Looking Back to Look Forward.

Prep

  1. In a bowl combine papaya, pineapple, chayote, red onion, Aji Amarillo, lime juice, cinnamon and salt. Mix well until ingredients are evenly distributed.
  2. Hold refrigerated for service. Just prior to serving, fold in cilantro.

CHEF’s TIP!
